Ingredients

1 servings
  • cooked white rice
  • mustard oil
  • dried red chilies
  • salt
  • garlic cloves
  • onion · sliced
  • 1 tomato
  • chicken drumsticks
  • water
  • lemon
  • fresh coriander leaves · chopped
  • green chilies

Preparation

  1. 1

In a small clay vessel, heat mustard oil and fry dried red chilies, then remove and set aside. In the same oil, sauté garlic cloves and sliced onions until fragrant, then remove and set aside.

  2. 2

Skewer the tomato with a fork and char directly over a stovetop flame until the skin is blistered and blackened. Peel the charred skin.

  3. 3

Combine the fried red chilies, salt, sautéed garlic, sautéed onions, and charred tomato in a large dish. Mash these ingredients together thoroughly with your hands.

  4. 4

In a pot, poach chicken drumsticks in water with a pinch of salt and lemon juice until fully cooked. Remove the chicken, let it cool, and shred the meat from the bone.

  5. 5

Add the shredded chicken and chopped fresh coriander to the bowl with the mashed aromatic mixture. Mix well by hand until thoroughly combined.

  6. 6

Serve the chicken mixture as a scoop over a bed of steamed white rice, garnished with green chilies and a drizzle of mustard oil.
