  • 3 Tbs. butter
  • 6 slices firm, coarse-textured bread
  • 6 c. meat or chicken broth
  • salt
  • 6 eggs
  • freshly ground pepper
  • 6 Tbs. freshly grated Parmesan cheese

Preparation

    Melt the butter in a saucepan and fry the bread slices on both sides until they reach a golden brown color. Divide the toasted slices among six individual soup bowls.

    Place the bowls into an oven that has been pre-heated to 175°C, then turn the oven off.

    Meanwhile, bring the broth to a boil and season with salt if necessary. Place one egg onto each slice of bread in the warmed bowls.
