
Cheddar Cheeseburger Meatloaf
Studded with melty nuggets of sharp cheddar cheese, this meatloaf is finished with a tangy tomato and mustard glaze. It offers a comforting, savory twist on the traditional American dinner classic.

- 1/4 cup plain breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 1 large egg
- 1/2 cup onion · minced
- 4 oz sharp cheddar cheese
- 1 lb ground beef · 85/15 blend
- 1/2 cup ketchup
- 1 Tbsp brown sugar
- 1 tsp yellow mustard
- 1 tsp Worcestershire sauce

Preheat the oven to 175°C. In a small bowl, stir together the breadcrumbs, smoked paprika, garlic powder, and salt. In a separate small bowl, lightly whisk the egg.

Finely mince the onion. Roughly chop the cheddar cheese into pieces about the size of a small bean.

Combine the ground beef, seasoned breadcrumbs, whisked egg, minced onion, and chopped cheddar in a bowl. Mix thoroughly by hand until well incorporated.

Place the meat mixture into a casserole dish or onto a rimmed baking sheet. Shape it into a rectangle approximately 7 inches long, 4 inches wide, and 1.5 inches thick.

Prepare the glaze by stirring together the ketchup, brown sugar, mustard, and Worcestershire sauce. Spread this mixture evenly over the top of the unbaked meatloaf.

Bake for 50 to 55 minutes, or until the internal temperature reaches 70°C. Remove from the oven and let it rest for 5 to 10 minutes before slicing into eight pieces to serve.
