  • 1.5 cup plain Greek yogurt
  • 1 clove garlic
  • 1 tbsp fresh dill
  • 1 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp salt
  • 0.125 tsp black pepper
  • 0.25 tsp granulated white sugar

    Grate half of the cucumber using the large holes of a box grater, leaving the other half for serving.

    Transfer the grated cucumber into a fine mesh cheesecloth or nut milk bag and squeeze firmly to remove as much liquid as possible until approximately ½ cup of cucumber remains.

    Combine the Greek yogurt, squeezed cucumber, minced garlic, dill, lemon juice, olive oil, salt, pepper, and sugar in a medium mixing bowl and stir until uniform.

    Refrigerate for at least 30 minutes to allow the flavors to blend; stir again before serving if any liquid has separated.
