Ingrédients

4 pers
  • 1/4 cup low-fat buttermilk
  • 3 tsp Old Bay seasoning · divided
  • 4 pieces cod · or Pollock, halibut, or other firm, white fish fillets
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 cup Panko breadcrumbs
  • Lemon wedges · for serving
  • Tartar sauce · for serving
  • Chopped fresh parsley · optional

Préparation

  1. 1

In a liquid measuring cup, stir together the buttermilk and 1 teaspoon of Old Bay seasoning. Place the fish in a large ziptop bag, pour the marinade over it, seal tightly while removing air, and refrigerate for 20 minutes.

  2. 2

Set up three separate stations: place the flour in a shallow dish, whisk the egg in a second dish, and combine the Panko breadcrumbs with the remaining 2 teaspoons of Old Bay seasoning in a third dish.

  3. 3

Working with one fillet at a time, remove from the marinade, shake off excess liquid, coat in flour, dip into the egg, and finally press into the Panko mixture until fully covered. Repeat with all fillets.

  4. 4

Coat the air fryer basket with nonstick spray. Arrange the fillets in a single layer without touching. Lightly mist the tops with spray and air fry at 199°C for 10 to 12 minutes, flipping halfway through. The fish is done when it reaches an internal temperature of 63°C.

  5. 5

Serve immediately with lemon wedges, tartar sauce, and a garnish of fresh parsley if desired.
