
Almond Flour Chocolate Chip Cookies
Almond flour provides a tender, chewy base for these simple chocolate chip cookies. Mixed in a single bowl with no chilling time required, these treats are naturally gluten-free and easily adapted for vegan diets.

- 1/2 cup coconut sugar
- 1/4 cup almond butter
- 1 large egg
- 1 tsp pure vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
- 2 cup almond flour
- 1/2 cup semisweet or dark chocolate chips
- Flaky sea salt · optional

Preheat the oven to 177°C and line a baking sheet with parchment paper or a silicone baking mat.

In a stand mixer or a large bowl, beat the butter, coconut sugar, almond butter, egg, and vanilla extract on medium-high speed until smoothly combined.

Sprinkle the baking soda and salt over the mixture, add the almond flour, and beat on low speed until combined. Fold in the chocolate chips by hand.

Scoop the dough into 2-tablespoon portions and roll into 2-inch balls. Place on the baking sheet, spacing them 2 inches apart.

Flatten the tops of the balls with your fingers and sprinkle with flaky sea salt if desired.
