
Chicken Caesar Smash Tacos
These handheld tacos feature seasoned ground chicken smashed onto flour tortillas and fried until crispy. The warm, golden shells are finished with a vibrant romaine, parmesan, and pepperoncini Caesar salad.

- 1/2 cup mayo
- 1/4 cup plain yogurt
- 1 tbsp Dijon
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 clove garlic · grated
- salt · to taste
- 1/2 head romaine · finely shredded
- 1/2 cup pepperoncini · sliced
- 1/4 cup freshly grated Parmesan cheese
- 1 lb. ground chicken
- 1 tbsp chicken seasoning
- salt and pepper · to taste
- 6-8 small flour tortillas
- avocado oil · for frying

Whisk the mayo, yogurt, Dijon, Worcestershire sauce, lemon juice, grated garlic, and salt until smooth to create the Caesar sauce.

Combine the shredded romaine, sliced pepperoncini, Parmesan cheese, and half of the prepared Caesar sauce in a bowl. Mix the remaining sauce with 1-2 tablespoons of water to create a thinner consistency for dipping.

Incorporate the seasoning into the ground chicken. Lay the tortillas on a flat surface and spread the ground chicken mixture across each, ensuring it reaches the edges.

Heat a thin layer of oil in a skillet over medium heat. Place the tortillas chicken-side down into the pan, pressing firmly with a spatula for 15-30 seconds. Cook for 2-3 minutes until the chicken is browned and cooked through, then flip and crisp the other side for one minute.

Remove the tacos from the skillet and fold them in half while warm. Stuff the prepared Caesar salad inside the folded tacos just before serving.
