
Ham, Egg, and Cheese Brunch Cups
These elegant brunch cups feature flaky puff pastry shells filled with a rich, savory cheese sauce, fresh eggs, and diced ham. They provide a sophisticated option for hosting breakfast or brunch gatherings.

- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 3/4 cup shredded Swiss cheese · shredded
- 1/4 tsp salt
- 2 puff pastry · sheets
- 18 cage-free brown eggs
- 1-2 cups diced ham · diced
- 1 cage-free brown egg · beaten
- Chopped fresh chives, salt, and pepper · for topping

Preheat the oven to 190°C.

Melt the butter in a small saucepan over medium heat, then whisk in the flour. Gradually pour in the milk while whisking constantly. Continue to cook until the mixture simmers and thickens, then remove from heat and stir in the Swiss cheese and salt. Set aside.

Roll out the puff pastry sheets until thin and divide each into 9 equal squares. Line the wells of a muffin tin with the pastry squares, pressing them into the bottom and sides. Add a spoonful of the cheese sauce to each cup, crack an egg into the center of each, and scatter the diced ham over the top. Brush the exposed pastry edges with the beaten egg.
