Cauliflower and Quinoa Meatless Spheres
Cauliflower, quinoa, and brown rice combine to create these versatile meatless spheres. Perfect for stocking the freezer, they serve as a plant-based addition to bowls, salads, or pasta dishes.
Ingrédients
- 10-12 oz cauliflower rice · or 3 cups florets
- 1 1/2 cup cooked quinoa and/or brown rice
- 1 cup panko breadcrumbs
- 2 eggs
- 1-2 tsp spices · chili powder, paprika, and/or cumin
- 1 tsp salt
- Olive oil
Préparation
- 1
Preheat the oven to 200°C. Steam the cauliflower rice and the grains until warm and tender; if using fresh cauliflower florets, boil them until soft and drain thoroughly.
- 2
Pulse the cauliflower and grain mixture in a food processor until the texture is semi-smooth. Transfer the mixture to a large bowl, add the panko, eggs, spices, and salt, and stir until well combined.
- 3
Roll the mixture into small, uniform balls using approximately one heaping tablespoon of mixture per sphere.
- 4
Arrange the balls on a baking sheet, brush the tops generously with olive oil, and bake for 20 minutes.
