Ingrédients

  • 10-12 oz cauliflower rice · or 3 cups florets
  • 1 1/2 cup cooked quinoa and/or brown rice
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1-2 tsp spices · chili powder, paprika, and/or cumin
  • 1 tsp salt
  • Olive oil

    Preheat the oven to 200°C. Steam the cauliflower rice and the grains until warm and tender; if using fresh cauliflower florets, boil them until soft and drain thoroughly.

    Pulse the cauliflower and grain mixture in a food processor until the texture is semi-smooth. Transfer the mixture to a large bowl, add the panko, eggs, spices, and salt, and stir until well combined.

    Roll the mixture into small, uniform balls using approximately one heaping tablespoon of mixture per sphere.

    Arrange the balls on a baking sheet, brush the tops generously with olive oil, and bake for 20 minutes.
