
Street Corn Green Salad
Charred corn, black beans, and cotija cheese combine in this elote-inspired salad. Finished with a creamy lime-chili dressing, it offers a blend of fresh greens and crunch from tortilla strips.
Ingrédients
- 2 hearts of romaine · chopped
- 2 cup charred corn
- 1 can black beans · rinsed and drained
- 1/2 cup crumbled cotija cheese
- 1/2 cup roasted pepitas
- 1 cup tortilla strips
- 1/2 cup fresh cilantro · chopped
- 3 green onions · thinly sliced
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tsp chili powder or Tajín
- 1 garlic · small clove, finely grated
- 1/2 tsp fine sea salt
- 1/4 tsp freshly cracked black pepper

Sauté the corn in a hot skillet with a drizzle of oil for 5–7 minutes until lightly charred, then set aside to cool slightly.

Whisk together the sour cream, mayonnaise, lime juice, lime zest, chili powder, garlic, salt, and pepper in a small bowl until smooth.

Combine the chopped romaine, charred corn, black beans, cotija, roasted pepitas, cilantro, and green onions in a large bowl.

Drizzle the prepared dressing over the mixture and toss until all ingredients are evenly coated.
