
Sesame Smashed Cucumber and Avocado Salad

- 6 Persian cucumbers · halved lengthwise
- 2 large ripe avocados · cut into large chunks
- 2 scallions · thinly sliced
- 2 tbsp fresh cilantro · finely-chopped
- Furikake and chili crisp · optional, to taste
- 2 tbsp rice vinegar
- 1 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1 1/2 tsp granulated sugar
- 1 small clove garlic · finely grated
- 1/4 tsp fine sea salt · plus more to taste

Place the cucumbers flat-side-down on a cutting board and gently smash them with the side of a knife until they crack open, then cut them diagonally into 1-inch pieces.

Whisk together the rice vinegar, soy sauce, sesame oil, sugar, garlic, and salt in a small bowl until the sugar has fully dissolved.

Combine the smashed cucumbers, avocado chunks, sliced scallions, and chopped cilantro in a large bowl. Drizzle the prepared dressing over the vegetables and toss gently to coat, taking care to preserve the avocado texture.
