
Blackened Blue Cheese Burgers
Bold blackened beef patties meet a creamy blue cheese sauce in this pairing. Crispy bacon, peppery arugula, and sharp red onion provide texture atop toasted brioche buns.

- 1/3 cup mayonnaise
- 2 ounce crumbled blue cheese
- 1 tsp Dijon mustard
- 1 tsp red wine vinegar
- 1/4 tsp garlic powder · for sauce
- 1 pound ground beef · 80/20
- 1 tsp Worcestershire sauce
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- Neutral oil or butter
- 4 brioche buns
- 6–8 slice bacon
- 2 cup fresh arugula
- 1/4 small red onion

Whisk together the smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, black pepper, and fine sea salt in a small bowl to create the blackened seasoning.

Combine the mayonnaise, blue cheese, Dijon, red wine vinegar, garlic powder, and black pepper in a separate bowl until smooth.

Fry the bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate.

Mix the ground beef, Worcestershire sauce, salt, and pepper in a bowl, then shape into four 3/4-inch thick patties with a small indent in the center. Press the blackened seasoning mixture firmly onto both sides of the patties.

Heat a grill or cast iron skillet over medium-high heat with a little oil or butter. Sear the patties for 3–4 minutes per side until a crust forms and they reach the desired doneness. Let them rest for a few minutes.
