  • 1/2 cup pepitas (green pumpkin seeds) · toasted
  • 1/3 cup olive oil
  • 2 tsp red wine vinegar

  • 3 large zucchini
  • 1 pint cherry tomatoes
  • Fresh basil leaves · for garnishing

    Pour the pepitas into a medium skillet over medium heat. Cook, stirring frequently, until fragrant and they begin to pop, about 3 to 5 minutes. Remove from heat and let them cool on a plate.
