  • 3 to 4 big leaves of curly green kale
  • 4 medium ripe avocados · halved and pitted
  • 3 to 4 tbsp lime juice
  • 3/4 tsp kosher salt
  • 1/3 cup red onion · roughly chopped
  • 1/4 cup fresh cilantro · roughly chopped
  • 1 small jalapeño · seeded and chopped

    Remove the tough ribs from the kale and chop the leaves into small, bite-sized pieces. Sprinkle with a pinch of salt and a teaspoon of lime juice, then massage the kale by hand until it softens, turns a darker shade of green, and becomes fragrant. Measure out 1 cup of the prepared kale.

    Scoop the avocado flesh into a food processor, discarding any browned areas. Add 3 tablespoons of lime juice and the salt, then process until the mixture reaches a mostly smooth consistency, scraping down the sides as needed.

    Add the massaged kale, red onion, cilantro, and jalapeño to the food processor. Blend until the ingredients are incorporated, leaving tiny bits of texture if desired. Adjust seasoning with additional salt or lime juice to taste and serve immediately.
