
Baked Texas-Style Cheese Fries
These oven-baked fries are topped with sharp cheddar, smoky bacon, pickled jalapeños, and fresh scallions. A lighter take on the classic comfort food staple.

- 2 medium potatoes · Yukon Gold or Russet
- 2 tsp olive oil
- 1 tsp smoked paprika
- 1/4 tsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/8 tsp cumin
- Coarse salt
- Fresh cracked pepper
- 1 slice center-cut bacon · cooked and finely chopped
- 1/3 cup sharp shredded cheddar cheese
- 2 tbsp diced scallions
- 1 tbsp sliced pickled jalapeño

Preheat the oven to 230°C. Line a baking sheet with foil, if desired, and lightly coat it with cooking spray.

Cut each potato lengthwise into 1/4 inch thin slices, then slice those into 1/4 inch fries.

In a large bowl, combine the potatoes and olive oil, tossing to coat. Add the smoked paprika, chili powder, onion powder, garlic powder, cumin, salt, and pepper, then toss again to coat evenly.

Spread the potatoes in a single layer on the prepared baking sheet. Bake in the bottom third of the oven for 10 minutes, then turn the fries and continue baking for 8 to 10 minutes, until crisp and browned.

Remove the sheet from the oven and top the fries with cheddar cheese, jalapeños, scallions, and bacon bits. Return to the oven for 1 to 2 minutes until the cheese is melted.
