
Buffalo Burger Quesadillas
Lean grass-fed buffalo patties meet melted cheddar jack cheese and zesty pico de gallo in this fusion of a classic burger and a crispy Mexican quesadilla.
Ingrédients
- 1 lb 100% lean grass-fed ground buffalo
- 1 cup pico de gallo
- 1 cup shredded reduced fat cheddar jack cheese
- 8 small whole wheat flour tortillas
- spray oil
- salt and fresh pepper

Form 4 flat patties as thin as possible and season them with salt and pepper.

Heat a pan over medium-high heat, coat lightly with spray oil, and sear the burgers for approximately 2 minutes per side until cooked through. Set the burgers aside.

Clean the pan, reheat over medium heat, and coat lightly with spray oil. Place 4 tortillas into the pan.

Distribute 2 tablespoons of cheese and 2 tablespoons of pico de gallo onto each tortilla.

Layer a cooked buffalo burger on top of each, followed by the remaining pico de gallo and cheese.

Cover with the remaining 4 tortillas. Flip and cook until the cheese is thoroughly melted and the tortillas are golden brown.
