
Baked Oatmeal with Blueberries and Bananas
Warm, wholesome, and perfectly structured, this baked oatmeal combines sweet fruit with toasted oats. It serves as an ideal morning meal, easily prepared in advance for busy weeks.
Ingrédients
- 2 medium ripe bananas · sliced into 1/2" pieces
- 1 1/2 cup blueberries
- 1/4 cup honey · or maple syrup
- 1 cup uncooked quick or old fashion oats
- 1/4 cup chopped walnuts or pecans
- 1/2 tsp baking powder
- 3/4 tsp cinnamon
- pinch of salt
- 1 cup fat free milk
- 1 large egg
- 1 tsp vanilla extract

Preheat the oven to 190°C. Lightly grease an 8x8 or 9x9 inch ceramic baking dish with cooking spray.

Arrange the banana slices in a single layer on the bottom of the dish. Scatter half of the blueberries over the bananas, then sprinkle with 1/4 tsp of the cinnamon and 1 tbsp of the honey. Cover the dish with foil.

Bake for 15 minutes, until the bananas have softened.

In a medium bowl, combine the oats, half of the nuts, baking powder, the remaining cinnamon, and the salt.

In a separate bowl, whisk together the remaining honey, milk, egg, and vanilla extract.

Remove the baking dish from the oven. Pour the dry oat mixture over the softened bananas and blueberries.

Pour the liquid milk mixture evenly over the oats, then top with the remaining blueberries and walnuts.
