  • 1 lb pasta · linguini, angel hair, or spaghetti
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4-6 garlic · minced
  • 1/4 tsp red pepper flakes
  • 1/2 cup dry white wine or broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 pounds large shrimp · peeled and deveined
  • 1 tsp lemon zest
  • 1/4 cup fresh parsley
  • fresh lemon juice · to taste
  • salt and pepper · to taste

Préparation

  1. 1

Cook the pasta in a large pot of salted water until al dente, reserving 1 cup of the hot pasta water before draining.

  2. 2

While the pasta cooks, melt the butter in a large skillet over medium heat. Stir in the olive oil, minced garlic, and red pepper flakes, cooking for 1 minute.

  3. 3

Pour in the wine or broth, salt, and black pepper, bringing the mixture to a simmer for 2 minutes.

  4. 4

Add the shrimp and lemon zest to the skillet, sautéing for 2 to 4 minutes until the shrimp are opaque and cooked through.

  5. 5

Incorporate the cooked pasta into the skillet, using a splash of the reserved pasta water to loosen the sauce and toss thoroughly.

  6. 6

Adjust seasoning with additional salt, pepper, and fresh lemon juice to taste, then fold in the fresh parsley and serve.
