Roasted Salmon with Spinach and Feta Pasta
A balanced meal pairing oven-roasted salmon with a light, fresh pasta tossed in feta and wilted spinach. It is simple to prepare and comes together efficiently.
Ingredients
- 2 salmon fillets
- 200 g pasta
- 150 g fresh spinach
- 100 g feta cheese
- 2 tbsp olive oil
- 1 lemon
Preparation
- 1
Preheat your oven to 200°C. Place the salmon fillets on a parchment-lined baking sheet, drizzle with a little olive oil, and season with salt and pepper.
- 2
Roast the salmon in the oven for 12–15 minutes until it flakes easily with a fork.
- 3
While the salmon roasts, bring a large pot of salted water to a boil and cook the pasta according to package instructions.
- 4
Reserve a small splash of pasta water, then drain the pasta.
- 5
In the same pot, heat a tablespoon of olive oil over medium heat and add the fresh spinach, stirring until just wilted.
- 6
Return the cooked pasta to the pot with the spinach.
- 7
Crumble the feta cheese into the pasta, add the reserved water, and squeeze in the juice from half the lemon. Toss everything together until the feta creates a light, creamy sauce.
- 8
Serve the pasta topped with the roasted salmon fillets and garnish with thin lemon slices.
